Meal Plan Monday

I've really been slacking on my meal planning the last couple weeks.  And wow, what a difference it makes.  We have been eating out and needing to run to the store way too often for little things here and there, both which lead to foolish spending.  I think I'm going to switch to doing just a week at a time for now.  It's much easier to plan and I'm going to focus my time on making freezer meals for when the baby comes.  I'm hoping my mom will come up this week and help me make some meals and/or keep Kyla occupied while I cook.  I have no clue what I'm doing so I'm doing some research for good, easy recipes.  I didn't make any when we had Kyla, but my sister-in-law brought us a couple of meals and it was so nice! 

This week's dinners:
Monday, July 30th - Calzones
Tuesday, July 31st - Brats on the grill, french fries
Wednesday, August 1st - Chicken Parmesan Bake, Vegetable
Thursday, August 2nd - Leftovers
Friday, August 3rd - Baked Spaghetti, Garlic Toast
Saturday, August 4th - Leftovers or Pizza
Sunday, August 5th - Grilled Cheese, Tator Tots

Freezer meals to make this week:
1. Cheese Soup
2. Lasagna
3. Baked Spaghetti

  1. I think you are right, it is easier to plan for a week at a time.

    Good luck with the freezer meal cooking. I have researched on that the past couple years, but I never actually did it yet. I think you will be so glad if you do. I think my fav. place to read about it is "Life as Mom" and then one of the nurses in Helena told me about "Once a Month Mom". I am a fan of them on FB, so you can find it there.

    Can't wait to see your giveaway. I was planning on trying to do something fun too. :) Mine will have to be mainly gender related, because we all know about when baby will be coming... I think. :)

  2. My mom made us chicken pot pie and tator tot casserole for freezer meals when brielle was born. Those both freeze well. She also made homemade chicken noodle soup and froze it in icecream buckets...that is super yummy as a freezer meal too :-)

  3. one thing i absolutely LOVE to freeze is stuffed shells(stuffed w/ cheese & spinach with a sausage spagetti sauce!), any pasta dish is really a great freezer meal. spagetti sauce itself is great to freeze then you have a healthy quick option on hand!

    Crock Pot mac and cheese

    16 oz macaroni, cooked and drained
    1 can condensed Cheddar cheese soup
    8 oz grated sharp Cheddar cheese
    8 oz grated extra sharp Cheddar cheese (we used med cheddar)
    1 can evaporated milk
    1 cup milk

    Combine all ingrdients and place in crockpot. Cook on low 3 hours. Freeze in bags or rigid containers. To serve: Thaw and place in a sprayed baking dish. Bake at 350 for 25-30 minutes.

    I found this website for "dump" chicken, you prepare it, freeze it, and dump it into whatever pan you use to cook it, even the crock pot! I found that I have a lot of the ingredients on hand already :)

    These rolls are Cory's favorite! They'd be easy to make a ton at a time, freeze, and nuke them when you want some. I also made some with ranch instead of hot sauce, and it was great :)
