Beef Stroganoff

 

Another recipe I got from Life as a Lofthouse.

Ingredients:
 8 oz. extra wide egg noodles
1 lb ground beef
1/2 cup chopped onion
1 clove garlic, minced
1/2 tsp salt
1/2 tsp pepper
1 cup beef broth
8 oz sour cream
1 can (10 3/4 oz) of cream of mushroom soup
2 tsp dried parsley

Directions:
1.  Start browning your ground beef in large skillet.  Once cooked, drain grease and then add the onion, garlic, salt and pepper.  Stir.
2.  Pour in beef broth.  Bring to a slight boil then reduce heat and simmer for 5-8 minutes.
3.  Start boiling your noodles as directed on package.
4.  After the beef mixture has simmered, add the sour cream and mushroom soup.  Keep the temperature at medium heat to bring back to a boil, stirring often.
5.  Make sure mixture is heated thoroughly and then add dried parsley.  Stir.
6.  Drain the egg noodles and place them on your plate.
7.  Pour beef mixture on top of noodles.
8.  Dig in!







Again, not the greatest looking thing :)

Kyla was sick this night and wouldn't eat anything, but I think she would have liked it.  I, being 30 weeks pregnant, get nauseous very easily with certain smells.  Well, the combination of the beef broth and the onion made me very woozy.  So I couldn't even stomach trying it.  But I know I'd like it under normal circumstances.

But the most important critique is always Tyler's and he loved it!  "Absolutely delicious!"  I guess that makes me 3 for 3 so far!  And we had plenty of leftovers for Friday night so we saved our pizza night for another time.

    1. Thanks, Bri! I think Tyler is loving it too :) I have been having a lot of fun with it. I am now on the hunt for some good recipes to freeze for when the baby comes.

  2. this stroganoff would freeze well. Just make everything but the noodles and pop it into a ziplock bag. I have a freezer meal cookbook around here somewhere, I will send it to you if I can fine it :)

    1. Oh, I didn't even think of that Linda. Thank you! I will definitely be freezing this and then we can just boil some noodles when we're ready to eat it.

      The more freezer meals we have, the less I will send Tyler out to get fast food! And we have a good size freezer downstairs so we have plenty of room for meals!
